Reasons to slow the heating of a Thermomix could be ingredients of larger quantities, food directly from the fridge, or liquids that are not room temperature, which can cool the bowl and therefore slow the heating of the Thermomix®.
For the Varoma® setting, it’s not a matter of reaching a specific temperature, it’s a special setting where the food is steam-cooked.
Note: water has the physical property of evaporating at 100°C. This means that unlike fat or oil, for instance, it can never reach 120°C.
There is a simple test that can be done to check the heating function of a Thermomix® - Place an empty dry mixing bowl in your Thermomix, set the Thermomix to 3 min / 120 C / Speed 1. If the temperature is not reached, it is likely the heating mechanism is malfunctioning.
